Ho Ho… Hold on a Minute! We Skipped Turkey Day

I know that Turkey Day is just around the corner and I’ve been asked a thousand times what we do at our house. It’s really simple actually, free range fresh turkey from the Dakota’s. Over the years we have prepared it every way possible; grilled, smoked, roasted, fried and the most memorable I think, “in the ground”.

Here’s a little story about the “in the ground” turkey that will either have you laughing or calling me a genius, either way I’m okay with it. Here it goes.

About 13 years ago I was working out of state with the incredible Hillstone Company so I came home to visit my family for Thanksgiving. We all gathered in the Verde Valley this particular year, at my brother’s house. Everyone was excited by the aromas of stuffing and fresh turkey, then it happened……. a complete and total blackout. That meant no gas grill, no oven, nothing to cook with at all. We called and were told a minimum of 7-10 hours. Guess what, that doesn’t work out well with a house full of hungry family. So there we were with a giant raw turkey, a couple shovels and a couple cords of fresh cut mesquite. The next thing you know the birds are stuffed full of butter and fresh herbs and are hovering over a fresh bed of ash, roasting/smoking to perfection. You might ask why “in the ground”? It wasn’t because this was the best way, or even the best flavor, but because we worked together as a family to get it done, because we had earned it. That is a memory I am thankful for.

This article is hard for me because just the other day, Sunday November 9th, we celebrated an early Thanksgiving because my brother is losing his five year battle with cancer. I didn’t want us to miss the opportunity to get together one last time. Maybe it was for selfish reasons, maybe I need his approval, or maybe it was simply because we as a family are not perfect, but we always seem to figure it out. That is something to be truly thankful for, and what this holiday is all about. I realize this isn’t my usual playful attitude, but a more serious side of my personality. The one thing I want to get across is this, love yourself and be thankful for who you have, and for who has you.

Ok, back to what I’m good at, this year at Schoolhouse we are going to be serving up a classic turkey dinner but with Sous Vide turkey! Yum! Here’s a quick explanation of this method. Remember the old boil-in-bag foods? Yup, that’s the idea, but at a lower temperature for a longer amount of time in MUCH bigger bags. Of course, the bigger bags also have better stuff in them.

Here’s a recipe for a really great roasting rub. This will give your turkey great flavors, even if all of you don’t have the necessary machine in your kitchen for our “boil-in-bag” preparation. Thank you for reading and I look forward to sending you our Holiday and New Year article.

Schoolhouse Roasting Rub

  • ½ Cup Extra Virgin Olive oil
  • ¼ cup of each of the following finely chopped
  • Oregano
  • Basil
  • Tarragon
  • Rendered Bacon
  • Fresh Shallots
  • Fresh Garlic
  • 1 Tablespoon Sea Salt (I like Volcanic Black because it adds a ashy flavor
  • 1 Tablespoon Fresh Cracked pepper
  • 1 Cup cognac
  • Mix all together and rub the heck out of your bird. Do not forget to rub under the skin!

The Annual Sedona Turkey Trot 5K is presented by the Sedona Running Company. The start and finish will be at Posse Grounds Park in Sedona at 9:00am on Thanksgiving Day, of course, with packet pick-up at 8:00 am. The course will be an out-and-back with a small loop on Soldier Pass Rd. If you would like to take on a extra challenge, take your turkey on the run with you. Yes, I’m serious. I told you this event was fun! Go for it, bring your bird and become a Iron Turkey Hero!

Out of Africa Wildlife Park A Personal Look at Out of Africa Wildlife ParkIt has been a while since I have been able to visit Out of Africa Wildlife Park, my favorite place in the known Universe! Work, life and weather have seemed to interfere with all of my plans for a visit this year. Last weekend I decided I had waited long enough. I had to return to see Pilgrim and give him a treat! I was more than ready to see the beautiful white tiger Chalet who always seems to be sunning and ready for photo ops, and lucky for me Chalet was the featured tiger that day in “Tiger Splash”! I mean really, could it get any better! Yes, yes it can! The new baby grizzly bear Sycamore was playful and fun to watch at the “Wonders of Wildlife” Show and I was able to meet Jericho, the very handsome white rhino!

I have come to expect wonderful experiences at the park, and I have yet to be disappointed. It seems like every time I have visited, there has always been a special experience waiting for me. I can still remember the very first time I witnessed “Tiger Splash”, the first time I came across the beloved Boom Boom, getting over my snake fear at the Giant Snake Show and my first Giraffe kiss! Now I get to add meeting Jericho to the list!

On a day that was already fantastic, I was treated to an extra surprise, Jericho! Now most of you that know me or have read anything I have ever written about Out of Africa know that I had a bond with the wonderful, remarkable, powerful rhino, Boom Boom. He was a favorite of everyone that visited the park. It was a very sad day when his spirit passed, and for me personally it was especially rough. I knew that it would be hard for me to visit the park and to see a new rhino in Boom Boom’s enclosure. Then I realized how selfish and a bit silly of me, I love all the animals at the park, even the ones that freak me out a little (like the hyenas). And I knew the White Rhino Jericho was there now. I really did want to meet him, and that I did, in a big way! I was fortunate enough to be allowed to get really close to this handsome creature, and no, he wasn’t Boom Boom, he had a personality all his own, and he too stole a little piece of my heart! Really a remarkable experience and I can’t thank the wonderful staff enough (especially Courtney and Ashton for making this encounter happen)!

So family, friends and visitors to Sedona and the Verde Valley area, this is why I go on and on about Out of Africa Wildlife Park! It is a great place for families, couples and individuals to visit. I would be very surprised if you had a bad day there. I mean, wildlife will be wildlife, there are days you visit and not all the lions, tigers and bears will choose to be seen. But for the most part you will see many of them, you will hear Lazarus roar, and see the tigers play, and Chalet will almost without a doubt be sunning and ready for you and your camera… and let’s not forget Jericho! So please, trust me on this, if you have not been yet, or it has been a while since you visited the park, GO! It is so worth it!

Walkin on Main Cottonwood, AZ   Enjoy Art, Wine, and Music this WeekendIf you are looking for something fun to do during your visit to Sedona, Arizona and the Verde Valley this weekend, you will not want to miss the “Walkin’ on Main“  street fair that celebrates Historic 89A and the state of Arizona.

A juried art show surrounded by the charming galleries, shops and local restaurants of Old Town Cottonwood will fill the streets of this historic section of town. The art show is an intricate part of the Walkin’ on Main Festival. The art show’s theme of Historic 89A explores traditional and contemporary artwork inspired by one of America’s most scenic routes – Arizona’s Historic State Route 89A.

Live music will play throughout the day featuring featuring Don Whitcher, the Sweet Baby Ray Band, and the Sugar Thieves. Verde Valley winemakers and vineyards will host an outdoor wine tasting on a closed off portion of historic 89A. Cost is $10 and with that each person will receive multiple taste of wine and a glass. Participating wineries and vineyards include: Alcantara Vineyards, Page Springs Cellars, Javelina Leap Winery, Pillsbury Winery, AZ Stronghold, Burning Tree Cellars and Dionysian Winery.T

The Mingus Union Art Club will be creating art live before your eyes on the street sidewalks. Rounding out the event will be displays from local historical societies, antique and classic cars organized by the Mingus Union Hot Rod Club, and self-guided historic tours of Old Town Cottonwood provided by the Cottonwood Hotel

Along with great hiking weather and beautiful fall colors still highlighting Oak Creek Canyon the 3rd Annual Sedona Jewish Film Festival will be taking place from November the 8th – 12th, 2014!

About the Festival
The Sedona International Film Festival is proud to team up with the Jewish Community of Sedona and the Verde Valley to present the Sedona Jewish Film Festival at the Mary D. Fisher Theatre. The program will feature the best of Jewish cinema, including 8 award-winning films representing six foreign countries and the United States plus a selection of award-winning short films.

The five-day event will include both narrative and documentary features. In addition, there will be a Live from New York’s 92nd Street Y simulcast as part of the festival offerings.     The first major feature-length documentary about the foreign airmen in the Israel War of Independence, the film brings together new interviews with pilots from the ’48 War, as well President Shimon Peres, to present an extraordinary, little-known tale with reverberations up to the present day.
     - World Religions: Spotlight on Judaism: Live from NY’s 92nd St. Y (5:30 pm)
    New York’s famous 92nd Street Y returns to Sedona when the Sedona International Film Festival hosts “World Religions: Spotlight on Judaism” featuring Jack Miles, Susannah Heschel and Professor David Biale live as it is happening in New York. Can religion be defined? Join award-winning scholars as they tell a new story: traveling from prehistory to the present day illuminating how world religions came to be acknowledged and studied, with a focus on Judaism.
  • November 10th
     - “Transit” (4:00 pm)
    From the perspectives of several main characters, Transit explores the intersecting stories of Filipinos in Tel Aviv when the threat of a law deporting the children of migrant workers looms over their precarious lives.

    In January of 2006 a beautiful young woman walks into a Parisian cellphone shop, looks around, and asks for the sales attendant’s number. Later, she calls asking to meet. Who could have known Ilan, the 23 year old man, was flirting with death? The next time his family hears from him is through a cryptic online message from kidnappers demanding ransom.
     - “Run Boy Run” (7:00 pm)
    A superlative saga of courage and compassion, Run Boy Run tells the extraordinary true story of a Polish boy who seeks the kindness of others in his solitary struggle to outlast the Nazi occupation and keep alive his Jewish faith.

     - “Rue Mandar” Preceded by “Reverence” (4:00 pm)
    Take a traditional Jewish funeral whose rituals no one can quite recall. Add a Yiddishkeit community in Paris, one of the most beautiful cities in the world, and top it off with an ensemble cast of dysfunctional siblings and spouses. What you get in the assured hands of director Idit Cébula is the charmingly poignant French film Rue Mandar.
     - Operations Sunflower – Closing Night Film (7:00 pm)
    The Iranians are bringing missiles out of their bunkers and within an hour and a half, they will be prepared to “push the button” and launch the missiles toward any point in Israel. Against the time that is running out, a political, scientific and human drama is being reconstructed. The drama took place in Jerusalem and Paris during the 1950s-60s. Operation Sunflower also deals with the dilemma involving the commitment of the Jewish People around the world toward the State of Israel and how far will they go to help the Jewish State. The story that unfolds in the film, in the words of one of the characters, “was mythical.”

Calling all ghost, witches, ghouls and goblins, you are invited to enjoy a safe and fun trick or treat in Uptown Sedona along “Main Street” (N. SR 89A & Hyatt Shops)! There will be dance performances and more taking place on Jordan Road adjacent to SR 89A crosswalk, courtesy of Martha Edwards and community dancers. At 5:30 in the Canyon Breeze Plaza, there will be a Costume Contest for 3 age categories plus groups/couples. What a great event to shake off those winter blues and kick off spring in the red rocks!

This 3 day mountain bike celebration will include a Main Expo/Festival area at the beautiful Tlaquepaque Village, Bike Demos, Shuttled Rides, a Beer Garden, great Bands and more!
