Come experience the first river race of the season while enjoying the Verde Valley’s attractions and activities.The race start is on Route 260, at White Bridge Park, just east of Camp Verde. The end of the race is at Beasley Flats, a US Forest Service Recreation Area approximately 10 miles downriver from the start. The river difficulty is class I-II (III at high water). Christopher Dobrowolski Verde Valley, AZ   Back to School with Chef Christopher DobrowolskiHi KIDS! Nice to see you on this almost Spring day. Not sure about where you are, but in Arizona it almost seems like it’s been spring since last fall. Sorry, that was just mean to say, especially if you are in the northeast area. Ok, enough of the bragging, let’s get down to some culinary ideas and a little tip for beef purchasing.

We are going to start out with a little food for thought and chat about what I think is one of the most well balanced fish, not only in flavor, but nutrients, and it can be sustainably fished. Arctic char is a cold-water fish in the family Salmonidae, native to Arctic, sub-Arctic and alpine lakes and coastal waters. It breeds in fresh water, and populations can be either landlocked or anadromous, migrating to the sea. No other freshwater fish is found as far north; it is, for instance, the only fish species in Lake Hazen on Ellesmere Island in the Canadian Arctic. It is one of the rarest fish species in Britain, found only in deep, cold, glacial lakes. It is also common in the Alps, where it can be found in lakes up to an altitude of 8,500 feet above sea level, and in Iceland.

Arctic char is closely related to both salmon and lake trout, and has many characteristics of both. The fish is highly variable in color, depending on the time of year and the environmental conditions of the lake it lives in. Generally, whole market-sized fish are between 2 and 5 lb (0.91 and 2.27 kg). The flesh color can range from a bright red to a pale pink.

Fish in general are an excellent natural source of protein, vitamins, minerals and polyunsaturated omega-3 fatty acids. Oily fish have an even higher concentration of omega-3 oils. American Heart Association recommends eating 2-3 servings of fish per week to ensure you ingest enough omega-3 essential fatty acids. Essential means the body cannot synthesize it and we must eat certain foods, particularly cold water fish, to ensure our body gets this important component. The cold and clean waters of the North produce fish that have an increased amount of these important nutrients making them superior to fish from other parts of the world. Wild Arctic Char is one of the most nutritious fish products available on the market today.

Nutritional Information for Arctic Char (per 100g serving, raw)

  • Energy – 154 Cal / 640 kJ
  • Protein – 20 g
  • Fat – 8.1 g
  • Carbohydrate – 0
  • Sodium – 51 mg
  • Potassium – 551 mg
  • Omega-3 – 6 g

Ok, now for something to go with your Char that is easy to make and so worth the time. Char is meant to be simply cooked (Salt & Pepper) grilled or pan sautéed. A lot of people make the mistake of cleaning out the bones and taking off the beautiful skin. With char I recommend that you do neither of these steps. Char bones literally melt back into the fish while cooking to add richness and nutritional value, as does the skin. Now you don’t have to eat the skin, but I do recommend leaving it on while you are cooking it. As for a sauce, here is a nice little recipe that we use at Schoolhouse.

Chimichurri Sauce (Kind of like Pesto)

Ingredients

  • 1 cup (packed) fresh Italian parsley
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1/4 cup (packed) fresh cilantro
  • 1/2 cup roasted pumpkin seeds
  • 2 garlic cloves, peeled
  • 1 Shallot, peeled
  • 3/4 teaspoon dried crushed red pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt

Preparation
Puree all ingredients in processor. Transfer to bowl. Cover and let stand at room temperature.

 

Last but not least and the final tip for today’s lesson; it’s about purchasing beef or any red meat. This is something the grocery stores and meat packers won’t tell you, but I will. During the six week of lent beef is on average 30% less expensive. Now, knowing that information it is a perfect time to buy a big chunk of Ribeye, or whatever tickles your fancy, and dry age the heck out of it.

The Coconino National Forest, one of six National Forest in Arizona, offers on of the largest varieties of landscape and beauty from the towering red rocks of Sedona to Ponderosa Pine Forests, to alpine tundra. Whatever difficulty level of hike or scenic wonders you want to experience you will find it here. Recreation and hiking information is divided into three Ranger Districts, just click on the area you are interested in hiking and see what awaits you! Red Rock State Park is a family-oriented 5-mile network of trails with a diverse habitat of plants and wildlife. Bell Rock Pathway
Bell Rock 2014 Hiking Guide for Sedona, Arizona and Surrounding AreasThis trail takes you on a scenic journey of the red rocks with panoramic views that can’t be beat. This hiking trail is marked as easy to moderate and there are other paths and trails that lead off the Pathway for you and your family to explore. The Pathway is about 7 miles round trip and it is important to remember it is not a loop. Keep that in mind while you are enjoying your hike and remember you have to hike back the distance you go in. You do not have to hike the entire pathway to enjoy some great views of the red rocks. As soon as you walk the first 10-15 minutes you will be close enough to feel the energy of Bell Rock and get some great views!

Directions: From the junction of Routes 89A and 179 in Sedona, take 179 south 3.6 miles to a paved turnout and trailhead parking on the left (east) at milepost 309.8 for the South trailhead, .2 miles south of the entrance to the United Methodist Church for the North trailhead. Red Rock Crossing – Crescent Moon Picnic Site

The Crescent Moon Picnic Site offers pathways that take you to the crossing where Cathedral Rock and Oak Creek meet. There are Picnic Tables, grills and well maintained restrooms. Enjoy a little water play in Oak Creek, walk the pathways and visit Buddha Beach, considered to be the site of a powerful vortex. You will find a variety of rock cairns, last time I was there I was overwhelmed by the complexity of some.

Directions: Drive west from Sedona on US 89A. Just outside town, turn south on FR 216 (Upper Red Rock Loop Road). Drive about 1.5 miles and follow the signs to Red Rock Crossing. All roads except the short segment leading from Red Rock Crossing Road to the picnic area are paved.

West Fork Oak Creek Trail
West Fork 2 2014 Hiking Guide for Sedona, Arizona and Surrounding AreasThere are a number of reasons why West Fork is the most popular trail on the Coconino National Forest. You’ll know some of them once you’ve strolled beside the pleasant little stream that ripples along the canyon floor and look up, way up, at the dizzying cliffs that tower above it. This hike is most popular in the fall when vibrant colors take over the trail, but now is also a great time for this hike, just keep in mind this hike will be cooler than the others, if you start early or late in the day you will want to dress in layers!

To access the West Fork Oak Creek Trail drive north 9.5 miles from Sedona to about halfway between milepost 385 and 384. The trailhead is on the west (left) side of the highway. Visit our West Fork Trail photo album.

Dead Horse Ranch State Park (Cottonwood)
DHRSP 2014 Hiking Guide for Sedona, Arizona and Surrounding AreasThe beautiful park with the unfortunate name sits on over 400 acres in Cottonwood, Arizona and is right next to the Verde River Greenway State Natural Area. The temperatures at the park are often mild, due the park’s elevation, and make it an ideal place for outdoor activities. This state park is a short distance from Sedona and has numerous hiking trails, not to mention trails for mountain biking and horseback riding. You can even take along a nice picnic lunch for your family and take in the scenic view at any of the picnic tables around the park.

Directions from Sedona: Head south on Arizona 89A, continue straight through AZ RT 260 intersection in Cottonwood, turn right onto N 10th Street to the park. Visit our Dead Horse Ranch Photo Album.

Tips for Hiking in Sedona

  • Make sure to bring plenty of water. Even if you are only hiking a short distance, hydration is key. Take more than you think you will need.
  • Create a hiking backpack that includes water, first aid kit, protein snacks, trail map, compass, sunscreen and sunglasses.
  • It is always safer to hike with others. Always let somebody know what trails you plan on hiking.
  • Wear suitable clothing and shoes for hiking.
  • Don’t leave the trail. The ecosystem of the desert is fragile and leaving even a footprint can damage it.
  • The trails in Sedona and the Verde Valley are very traveled and it is unlikely that you will come across a rattler, however if your tromp around off the trails you are asking for trouble! With that said be aware of your surroundings and respect the wildlife of Sedona!
  • Bring a camera to take some amazing shots.
  • Know your limitations.
  • Don’t rush your hiking experience. Take your time and enjoy the scenery.

In honor of Arizona Archaeology & Heritage Month and to help bring about greater awareness of these treasures, the importance of protecting and preserving them and their influence on modern day artists, the Goldenstein Gallery, Keep Sedona Beautiful, Pink Jeep Tours and Susie Reed Photos are collaborating to present the following “Explore the Ancient Wonders of Sedona” Events.

Free event featuring Susie Reed

Location: Keep Sedona Beautiful – 360 Brewer Road Sedona, AZ
Don’t miss this free event featuring Sedona’s own Susie Reed as she presents “Wonders of Sedona Rock Art & Honanki Heritage Site”! Susie Reed is considered a foremost photographer of rock art. She’s been researching, documenting and working to help protect archaeology sites in the Sedona area since 1995. She’ll share wisdom and unique insights she’s gained while following her passion. She’s made some fascinating discoveries and learned a great deal through her explorations and observations as well as from Forest Service workers, archaeologists, Native Americans, shaman and others she’s met along the way. She’ll be discussing rock art she’s photographed around Sedona as well as a stabilization project at Honanki Heritage Site that she documented for a number of years, which was funded by a Save America’s Treasures grant. Many of her photos are in the Coconino National Forest archives. Tales of her adventures are as colorful and captivating as her remarkable pictures.

Susie Reed will join participants on a fascinating tour to see spectacular rock art and amazing 700 year old Sinaguan Indian cliff dwellings at Honanki Heritage Site. The off road journey to and from the site goes through very beautiful scenery. The Pink Jeep Tour guide will provide information about the myths, legends and customs of the Native Americans who inhabited the area. Following the Honanki Heritage Site tour there will be a free reception at Goldenstein Gallery from 4:00 pm – 6:00 pm. Tour participants and the general public are welcome to attend. Jesse Kalu will play flute music and beverages will be served. The gallery represents a number of artists whose work is inspired and informed by Native American cultures, including Susie Reed’s photography.
