For the Love of Tomatoes with Chef Christopher Dobrowolski

Schoolhouse Journals June 2014
Tomato, Tamato or maybe even Tomate?
By Chef Christopher Dobrowolski

Christopher Dobrowolski For the Love of Tomatoes with Chef Christopher DobrowolskiYou guessed it we are on a tomato kick this month giving a brief history of what in the past was considered a poison fruit ooooooo scary.. Well let’s take a brief look shall we?

The tomato is the edible, often red fruit/berry of the nightshade. The species originated in the South American Andes and its use as a food originated in Mexico, and spread throughout the world following the Spanish colonization of the Americas. Its many varieties are now widely grown, sometimes in greenhouses in cooler climates.

The word “tomato” comes from the Spanish tomate, which in turn comes from the Nahuatl word tomatotl. It first appeared in print in 1595. A member of the deadly nightshade family, tomatoes were erroneously thought to be poisonous (although the leaves are) by Europeans who were suspicious of their bright, shiny fruit. Native versions were small, like cherry tomatoes, and most likely yellow rather than red. The tomato is native to western South America and Central America.

Aztecs and other peoples in Mesoamerica used the fruit in their cooking. The exact date of domestication is unknown: by 500 BC, it was already being cultivated in southern Mexico and probably other areas. The Pueblo people are thought to have believed that those who witnessed the ingestion of tomato seeds were blessed with powers of divination.

Tomat For the Love of Tomatoes with Chef Christopher DobrowolskiThe large, lumpy tomato, a mutation from a smoother, smaller fruit, originated in Mesoamerica, and may be the direct ancestor of some modern cultivated tomatoes. Seems like these guys have been around for a long time and personally one of my favorite’s cold, hot or even raw with salt and pepper. Unfortunately what you normally see in the supermarket today are not really tomatoes, those perfectly red round globes are not what the seam. True tomatoes come in a wide variety of shapes colors and sizes. Next time you are in the store take a stroll over to the organic section and take home some beautiful heirlooms (old seed tomatoes) and taste what the ancients did.

Ok got that out of the way and we can move on to something simply delicious! Here is a little ditty that will make you smile on a hot summer day. Simple ready?

Simply Delicious

  • 1 Thick cut Heirloom Tomato (Brandywine or crimson are my favs)
  • 3 fresh basil leaves
  • 1 Artesian ciabatta roll
  • 1 Sliced thick FRESH mozzarella ball
  • Drizzle of a good aged balsamic and some extra virgin oil
  • A dash of smoked salt and fresh cracked pepper
  • Build it like a sandwich and toast it like a grilled cheese and if you have time throw together a quick pesto to dab on while eating this masterpiece of simplicity.

Ok have to get back to our new summer menu at Schoolhouse and I look forward to seeing you again.

Best regards,
Christopher Dobrowolski/Schoolhouse Restaurant

The Sedona Community Farmer’s Market at Tlaquepaque

Sedona Community Farmer’s Market
Every Friday Morning through October 3rd, 2014

Farmers Market The Sedona Community Farmers Market at TlaquepaqueWhether you live in Sedona or are just visiting, the farmer’s market is a great way to check out the local flavor and grab some fresh produce and breads. If you are visiting Sedona and are staying at the Best Western PLUS Inn of Sedona our Complimentary “About Town” Sedona Shuttle will drop you off at the market and pick you up when you are ready to return to the hotel. And if you are worried about purchasing something that requires refrigeration, all of our rooms are equipped with a refrigerator.

“Good Eats” at the Sedona Community Farmer’s Market

Usually we center our “Good Eats” posts around a favorite local restaurant where you can enjoy a delicious meal at a good price, but much to our delight the Sedona Community Farmer’s Market at the beautiful Tlaquepaque Arts and Crafts Village offers some of the best nutritious eats in town! Okay, so they may not have servers and chefs waiting on you hand and foot but they have some really great vendors who offer nutritious snacks and wonderful ingredients for you to make you own delicious dishes!

On my visits to the market I am always pleasantly surprised with the variety of vendors providing everything from delicious greens to sauces. Of course I have my favorites! Sky Hi Sprouts ranks very high on my list. The sprouts and micro-greens are grown with organic seeds and soil, absolutely yummy! When I stopped by last year the gentlemen snipped off some sunflower sprouts for me to taste and that is all it took, I was hooked and have vowed to visit every Friday! I ended up buying a huge bag of sprouts and a few other greens. They have been a great addition to my salads, sandwiches and can stand on their own for a quick munch!

I also purchase breads, pasta sauce, salad greens, candles, and some very good hot sauces from some of the other vendors. All of which came in handy for my week with visiting family. The Mamma Letizia’s Spicy Italian Marinara Gravy was a huge hit in my special lasagna!

The market takes place ever Friday morning from 8:00 am – 11:30 am every Friday until October 3rd, 2014 in the creek-side parking lot of Tlaquepaque! Meet the local growers & taste the local flavor! Farm fresh fruits and vegetables, eggs, grass fed beef, goat products, tamales, breads and pastries, gluten free, vegan, hand-made chocolates, live music and much more! To see a full list of vendors or to learn more about the market please visit Sedona Community Farmer’s Market.
