Relax and Enjoy a Fall Hike in Oak Creek Canyon this Weekend

West Fork Trail in Oak Creek Canyon

By: Lisa Peters

West Fork Relax and Enjoy a Fall Hike in Oak Creek Canyon this WeekendWhen it comes to Fall hikes in the Sedona, Arizona area my all time favorite hike would have to be the West Fork Trail in Oak Creek Canyon. There has been a lot of talk about the trail possibly being destroyed by the unfortunate fire this summer. I myself was a little worried that the trail might have suffered from the flames. Thanks to our amazing firefighters who battled the fires no lives were lost, structures were saved and the fact that West Fork Trail survived with minimal damage is just icing on the cake.

Last week hikers filled the trail, photographers were out with tripods, and locals were smiling from ear to ear as colors started to peak. I am not saying you can’t see evidence of the fire, in fact there are glimpses of damage along the hike, but its minimal and in places even hard to detect. So I say, if you haven’t already, grab your hiking boots and head to Sedona!

West Fork Trail in Oak Creek Canyon

558799 447300855306752 436482286 n Relax and Enjoy a Fall Hike in Oak Creek Canyon this WeekendFall is the most popular time of year to take this hike when the beautiful red rocks and clear blue skies serve as the perfect backdrop for the vibrant fall foliage in Oak Creek Canyon, but there is no bad time of year to enjoy this hike. The shutterbugs out there will love it; there are awe inspiring images throughout the entire hike. I have been known to stop dead in my tracks to catch a photo of the cliffs peeking through the trees.

Beginning mid October the fall foliage is amazing and only gets better as the season goes on. Because of the popularity of this trail I highly suggest starting your hike in the early morning. The early morning hikes can be on the chilly side this time of year, a lot of the trail will be shaded, so make sure to dress appropriately. I usually wear an over shirt and a jacket that I can take off later and tie around my waist. When you first start the trail plenty of sunshine will warm you, but the further you get along the trees provide a great deal of shade, making those early morning hikes a bit chilly.

When you get to the bridge that crosses the creek make sure to take a minute and just hang out and enjoy the scenery. On my last hike there was a young man fly fishing which kept me entertained for some time. Not too far from the bridge you come into a section of the canyon were towering cliffs engulf you. You can’t help but stand there in amazement. You can see where water falls off the cliff, in fact when I last visited there you could still see water slowly running down the rocks from a rain storm early in the week.

I am a novice hiker so I always hike the first three miles of the trail. This three mile hike takes you into the beautiful canyon and stays fairly level and near the creek. You will however benefit from wearing a good pair of hiking boots. There are tree roots that you can easily trip over if you are not paying attention to where you are walking! Also keep in mind that there are places on the trail where you will be crossing the creek. The rocks can be a bit slippery and I myself have taken a splash. Now I always bring extra socks!

There will be a three mile marker that marks the end of the official path and hiking beyond this point takes a very experienced hiker. I have gone a little bit past this point and realized I personally was not ready to handle it yet. In fact if you choose to travel all 14 miles from one end of the canyon to the other, plan to do a lot of wading and boulder hopping, and even some swimming.

*The West Fork of Oak Creek Trailhead (Call of the Canyon Picnic Area) is operated by a concessionaire. Only the Grand Annual Red Rock Pass and the “Big Three” annual pass, (each $40.00) are accepted here, or you may pay the daily rate at the gate. To check out some of my photos of this hike click here.

The 2014 Guest Gallery Featured International Artist Porfirio Gutierrez

Porfirio Gutierrez 2 Sedona Arts Festival this Weekend in the Red Rocks! The Mexican Village of Teotitlan del Valle, Oaxaca, gave Porfirio Gutierrez his start in life. Porfirio, in turn, is determined to give Teotitlan its future. As the center of Zapotec culture and weaving traditions, Teotitlan produces many of the hand loomed wool goods commonly associated with Mexican exports. While the tourist industry supports weavers in the village, it is also the source of environmental and economic conflicts that keep the community from advancing its health and well-being.

With an eye to the future and roots firmly in the past, Porfirio is blending Zapotec-inspired patterns with his eco-conscious sensibility, producing striking tapestries and other fine weavings. The range of styles he achieves in his work brings new meaning to the idea of organic design: both his materials and his methods have evolved to blend effortlessly with contemporary California style…Read More about this artist by visiting the Sedona Arts Festival Website.

Step Up Your “Wing” Game with Chef Christopher Dobrowolski

Schoolhouse Journals October 2014

By Chef Christopher Dobrowolski

Christopher Dobrowolski Step Up Your Wing Game with Chef Christopher DobrowolskiAhhh… here we are again in the midst of my family’s favorite time of the year. Leaves are changing right along with the weather and in Northern Arizona we are getting our first taste of fall with a slight chill in the air. This month we’re going to talk about a couple of things that have been hot in the food industry and hit close to home at the Schoolhouse.

Upscale comfort food has been growing at an amazing pace. While comfort food itself has been around a long time, chefs are really starting to jazz it up. Mac and cheese just isn’t the same as Mamma made, and there is an ever growing catalog of “what else can we put in it”! At the Schoolhouse we keep it simple by using a little brie and white cheddar and finishing it with some Black Garlic that explodes with Umami (we will discuss this later). Add some five spice braised pot roast and some crispy purple kale and WOW, the flavors explode.

Wings are making a comeback again this year. Chefs are really taking it outside the box. The difference isn’t only with the basic chicken as the wow item, chefs have added duck wings, and yes, pork wings also. Now I know pigs don’t fly, but duck and pork wings are gaining huge ground because of their low cost. You probably won’t see the basic hot, hotter or rip your face off hot, like you did with chicken, since there are so many things you can do with them.

Now to get back to the funny word I used earlier, Umami. You can be mad at your parents and teachers for telling you there were only 4 basic tastes that your taste buds could recognize. Umami is the 5th basic flavor sense your buds recognize and it represents savory taste through glutamate receptors. Umami is naturally found in a number of foods including, shell fish, cured meats, mushrooms, fermented cheeses and some vegetables. Now that you know what it is I’m going to give you a recipe for our Black Garlic~Dr. Pepper Wings so you can experience the true depth of Umami.

Step up your “Wing” Game with Dr. Pepper Black Garlic Wings

Ingredients2Schoolhouse Wings Step Up Your Wing Game with Chef Christopher Dobrowolski

  • 2 Pounds fresh (not ever frozen) Chicken Wings
  • 20oz Dr. Pepper Soda
  • ½ Cup Ketchup
  • 2 tablespoons Siriracha Sauce
  • 2 Tablespoons Gluten free Worcestershire
  • 1 Tablespoon fresh chopped garlic
  • 1 Teaspoon Black pepper
  • I Tablespoon Smoked Paprika
  • I Sassafras Stick
  • 1 Tablespoon Black Garlic Puree (Amazon)

Directions
Combine Worcestershire, Ketchup, sriracha, Dr. Pepper, Fresh garlic, black pepper, paprika, sassafras stick, and black garlic puree. Bring to a simmer over medium heat. Simmer sauce, stirring occasionally, until it’s thick, about 30-40 minutes. Set sauce aside while you prepare wings. Fry wings at 350 degrees until they are golden brown and cooked through, 10-12 minutes. Drain wings on a few paper towels and then toss wings in cola sauce. Serve with napkins!

Thank you for reading my jabber. I look forward to writing November’s Journal so I can give you a “recipe for success” for your Turkey Day!

Best regards, Chris Dobrowolski, Schoolhouse Restaurant

Red Rock State Park 2014 October Hikes and Events at Red Rock State ParkJoin Red Rock State Park’s knowledgeable volunteers as they venture out on their trails and discuss how Sedona transformed into what we see today. Red Rock State Park is located at the base of the Mogollon Rim, the southern edge of the Colorado Plateau. Over millions of years of erosion the rim has receded over four miles leaving behind the picturesque features of Sedona. This is an interpretive experience for both the beginner and experienced hiker, lasting between 2-2 ½ hours and an elevation gain of 250 feet. Please bring water and wear suitable footwear.
